Got Milk? Homemade Coconut Milk




When I was making the transition from a vegetarian to more plant strong vegan diet - cow milk was one of the first (and most easily) things that I eliminated from my diet. Ya'll should know that I don't really like to preach but milk squeezed from some artificially inseminated cow who had her baby calf taken from her, but is then given who know what hormones and drugs to keep her lactating for as long as possible - so that I can enjoy a splash in my morning coffee?? Yes, strangly I had a very easy time giving up this morning ritual in place for one of the many yummy alternatives available.

Over the last few years I have tried several types of milk alternatives. Soy, coconut and almond remain my favourites. Recently I learned that some of the stabilizers added to these milk alternatives can irritate the tummy. If you drink the regular dairy products don't relax yet- you are included in the stabilizer party. 

Carrageenan is extracted from red seaweed (sounds harmless enough) and is used in many dairy and milk products as a stabilizer and thickener. Unfortunately, studies dating all the way back to the 1960's have shown carrageenan to be linked to gastrointestinal diseases. As someone who suffers from a 'sensitive belly' I am always on the look out for food additives that may be adding to my problem.

The long and short of it......I doubt there is any reason to run in a panic around your home throwing away everything that contains carrageenan. However, next time you are shopping for dairy products or dairy alternatives, maybe compare ingredient lists of various brands and select those that do not use carrageenan.

One sure fire way to know exactly what is going into your milk.... make it at home! I avoided doing this forever because I thought it would be difficult and messy. I was wrong. This is really easy - fun even. AND it is the best tasting milk I have ever had. 

The best part is you can completely adjust the ingredients and ratio to water to suit your preferances. I will give you my base recipe - but remember to adapt it to your tastes. Thus far I have only played with using almonds and coconut to make my milk. My favorite is actually to do a blend of 50/50 coconut and almond. The pictures below just show a coconut version. I also doubled the below recipe because I know how quickly I can slurp this stuff down :).

Homemade Nut Milk

Ingredients:

1 cup unsweetened coconut shreds (or almonds - soaked and rinsed for at least one hour prior)
3 1/2 cups filtered warm water (can use more or less to adjust thickness of milk)

Optional Add-ins
1tsp vanilla extract OR 1 vanilla bean scraped
1 tsp cinnamon
small pinch of salt
sweetener or choice - agave, maple syrup, stevia, dates etc- to taste

Directions:
Combine all ingredients in blender and blend on high for several minutes. While blending, gently place cheese cloth in a strainer and position over a bowl (see photo below).

Slowly pour blended mixture into strainer and let sit for a few minutes (I normally clean-up the kitchen while my milk strains aways).  Wash your hands! Gently lift the edges of your cheese cloth and 'hand milk' the remaining pulp. This is the fun part so do not skip- you will be leaving a lot of yummy milk in the cloth if you do!

Milk will be warm but you can do a taste test here to see if you would like more sweetener or flavors.

Silky smooth coconut milk. Tastes even better if you let it get cold! If your bowl does not have a pour spout, I highly recommend pouring the bowl of milk back into the blender before trying to pour into a mason jar or other container.

Guacamole!!!





Guacamole! 

Considering my deep passionate love for avocados I can not believe that I have not yet made guacamole. I think that I just end up eating them straight from their shell and have not taken the 5 minutes to turn them into this amazing little side.

So easy and super addictive. Lets just get to the recipe..

Ingredients
3 ripe avocados
Juice of 1/2 lemon
3 cloves of garlic
2 TBS Salsa
2 TBS fresh minced cilantro
1 TBSP fresh minced mint
1 tsp cumin seeds
salt and pepper to taste

1. Just mix it all together! I Mashed 2 of the avocados and left one of them diced so I would have some nice chunks in there. 
2. Try not to eat the entire batch in one sitting.... at least share it!

3. Have fun with this recipe... next time I want to roast the garlic..... yum!

Summer Fresh Smoothie

Woo Hoo, it has been warm here! We have had several days here that have been well over 90F and peaking to about 100F (that's about 38C for my international lovelies). I am LOVING the heat.... it makes it so I can almost ignore the orange tint that is affecting the leaves of all the trees around here...

My basil is doing fairly well in the heat although I think it almost drinks more water than I do!! I almost feel like I have a pet because I literally race home after work just to quench the thirst of my basil plant.

The heat and fresh basil combined on me last week into this A-M-A-Z-I-N-G smoothie.

Summer Fresh Smoothie

3/4 cup frozen pitted cherries
3/4 cup frozen hulled strawberries
1/4 cup fresh basil
Coconut milk to blend

Do I really need to write directions?!?

1. Place all ingredients in blender and blend until smooth....
2. Garnish with basil leaf

** I know that you are doubting the basil in this smoothie... but give it a chance!**



Understanding my recent obsession for basil a client brought be in some of this small leaf variety... How cool is that?!


And for the social section...
The gals and I finally got out for a night on the town together. We were a little warm, so B&W was the best option for our flushed faces! :)

Berry Banana Soft Serve

Time to celebrate...



SUMMER IS HERE!!!!!!!!!!!!!!!!!!!!!!!

Sunshine, water, flowers, fresh fruits and veggies, tank tops. driving with the windows down... ahhhhh yes..

I am trying to take full advantage of a long 4th of July weekend and the first really nice weekend of summer. After work yesterday I met two of the best friends a girl could ask for, for a little hike and dine. Today I took a nice sole bike ride and chose a hilly and beautiful route on the palouse south of Spokane. The ride includes a 2 mile long killer hill!! I rode out to this beautiful white chapel and cemetery. I learned a couple of lessons on my bike ride.... take more than 1 bottle of water and one GU packet when heading out in 80+ weather for 2-3 hours and wear sunscreen unless you want crazy biker gear tan lines....
Tomorrow the a fore mentioned ladies and I are going Stand Up Paddle Boarding. I am so excited!!


Berry Banana Soft Serve!



As indulgent as this looks and tastes you can make yourself a double serving without the guilt! It is all fruit with a drop of coconut milk!

For this treat just combine a frozen banana and about 1/2 cup of mixed frozen berries in a food processor. Let it run with just a drop of coconut milk, adding more as necessary.

Ahhh, Juice!

I realized that since letting you guys know that I purchased my first juicer, I have not posted any yummy juice recipes. And after my indulgent cupcake post I figured it was the perfect time. I realize that most do not have a juicer, but you can always blend up a Green Smoothie.

I tend to juice about 2 times a week. It is the best pick me up if I'm feeling a little lethargic, have been exposed to a onslaught of germs or just know I have been slacking in the vegetable consumption department. The juices I made this week are not actually the prettiest juices, but I have had so much fun with all the colours!
I have also discovered a bit of a fetish for ginger.. I can't get enough of the stuff. It is really good for and known to help increase the appetite.. not something I generally struggle with...



Green Goddess
2 green apples
1 cup spinach
1 small bunch Bok Choy
1/4 Lemon
1 inch ginger
1/2 cup pineapple

*Made this for the first time today since I had left over bok choy from the Spring Curry... LOVE IT! Lots of goodness but nice n' sweet!



Sunrise Special
3 large carrots
1/4 beet with greens
1 green apple
1 inch ginger

*This is one for the vegetable lovers. If you are new to vegetable smoothie you might want to add a 2nd apple.

Chocolate Pudding (and frosting!)





What do you get when you blend up some avocados, dates, cocoa, vanilla and agave?? The MOST amazing chocolate pudding/frosting on the planet!!!!!! I am so grateful that my coworker Sherry shared this recipe with me! This recipe makes "pudding" but I used it to frost Thor and his Dads Chocolate and Raspberry birthday cake last fall and it worked really well!


It was also used on these cupcakes that Sherry made for a work party...


Are you craving this yet?? I do recommend that you make people eat it BEFORE you tell them that the base is avocado... and its vegan and raw....but hey if you don't want to tell them, I wont spill the beans :)


PS. Rode my bike to work today so Im two for two in my quest to bike to work at least 1x a week!

Multi Grain and Seed Crackers


These crackers are delicious and nutritious! If you have a weakness for wheat thins, but hate all the processing, added salt and sugar, check these bad boys out! If you are a raw food lover you can dehydrate these but you will have to play with it because I don't dehydrate.


Ingredients:
½ cup Whole Wheat Flour
½ cup Cashews
1 tablespoon Garbanzo and Fava Bean Flour (optional)
¼ cup pumpkin seeds
3 tablespoons sunflower seeds
3 tablespoons hemp seeds
1 tablespoon flax Seeds
½ teaspoon sea salt
1/2 tablespoon Coconut Oil
1/2 tablespoon Vegan Margarine
¼ cup water



1.Pulse flour and cashews in food processor until well ground

2. Pulse in seeds, flax and salt until almost fully ground (leave a little texture for crunch)

3.Pulse in oil and margarine, then water; dough will form a ball in food processor

4.Roll out dough between 2 pieces of parchment paper or tin foil to ¼ inch (or less) thick. Use a little flour if its a bit sticky. You could always use a rolling pin but I prefer wine bottles....

5.Cut into 2-inch squares, 5 rows each way

6.Bake at 300° for 20 to 25 minutes

7. Salt to taste and serve!

These are great all by themselves or with some fruit and cheese!

Babies on the Brain!

Have you heard about fudge babies yet??? They are the biggest thing to hit healthy minded blogs since green smoothies. If you like nuts, and you like chocolate, and you like a sweet indulgence that is good for you....you will LOVE fudge babies. I first heard of them through a couple of other blogs like Elana's and Katie's, so I had to whip some up pronto!!

I would have taken pictures....but the babies kind of disappeared.... so here are some pics of other peoples fudge babies!





I decided to make chocolate peanut butter fudge babies because, well its chocolate and peanut butter!!!

Ingredients:

1/2 cup medjool dates (no pits)
1 cup peanuts
3 TBSP cacao or unsweetened cocoa
1 tsp vanilla
1/4 tsp salt

1. Process peanuts in food processor until they start to cream up.
2. Add all other ingredients and process.
3. Roll into bite sized balls and serve!

Seriously, its that easy!

Its so strange how all of mine disappeared before any pictures were taken...hmm...

Vegan Tortilla Soup! (Great raw!)

Happy Cinco de Mayo!
Can you believe that I am doing an on-time theme recipe post?
Believe it or not I have two Latina friends who have birthdays on May 5th! I cant wait to meet them both for lunch....all though I am sure that the Mexican restaurant wont believe us when we tell them the two Latinas at the table both have birthdays on cinco de mayo!

I LOVE tortilla soup, but have never made my own. Now that I have my very own super new fancy smanshy food processor, I decided I should whip some up! This recipe uses all fresh ingredients and is very very tasty as a cold raw soup! I will be eating it that way this summer! Since it is still chilly here in Spokane, I could not resist warming it up a little and serving with some warmed corn tortilla strips.

When I bake I am a little more precise with measurements, but what I love about soups and stews is that you can totally get away with "pinch of this, dash of that" measurements....so play with your own seasonings and have fun!

Ingredients:
2 Tomatoes
1 handful sun dried toms
1/2 green bell pepper
2 carrots
1 small handful cilantro
2 Stalks of Celery
1 small clove garlic
3/4 cup water
1 tbsp lime juice
2-3 tbsp olive oil
Dash Sea Salt
Dash cumin
Dash chili powder
Small dash paprika
Dash cayenne pepper
1 can Black beans (optional)
Avocado (for garnish)
Corn Tortillas (cut into strips or whole)


1. Place the first 7 ingredients in food processor. Pulse until all dry ingredients are nicely diced.



2. Add water, lime juice and olive oil and process until smooth... (If you are using a blender, dice everything by hand and just throw it all in and blend away...it may take a little more water to get it going)



3. Add spices to taste, mixing them in as you go. If you are raw, you can stop here, just garnish with Avos and you are good to go!!

4. If desired, warm soup on stove top. This is when you can stir in black beans or any other additions you would like (corn, tortilla strips, tofu etc)


5. Serve and garnish with sliced Avocados!

B-Day Weekend and Raw Vegan Cheesecake!

Just a quickie to recap my fab birthday weekend! From massages to lunching with out of town friends, to workouts and yoga and bike rides, to dinner and dancing, coffee and cooking! I am so lucky to have some amazing people in my life!!


This was my b-day gift from Thor....A FOOD PROCESSOR!!! So excited to get to creating .....check out my Vegan Raw Cheesecake below....

BUT....it tasted AMAZING!!!!!!! Like oh my gosh I just died and went to heaven AMAZING! AND its healthy! It even has zucchini in it! I have some ideas for making it a little more visually appealing so I will keep you all updated... :)



UPDATE: My 2nd raw vegan brownies looked much better! I just melted some semi-sweet chocolate chips and swirled them into my cheesecake top...yum!

Power Granola

I have been in a bit of a breakfast rut lately. I eat a whole grain English muffin with natural peanut butter every day. Don't get me wrong I LOVE my toasted muffin with PB...but I started thinking that maybe I should switch things up a little. So, on my next shopping trip I perused the granola options. To get some good, organic, naturally sweetened, high protein granola was so crazy expensive!!!! So I decided to make my own!

I found the base for this recipe at YumUniverse, and of course made a few modifications. This granola is organic, high in protein, naturally sweetened, vegan, easily made raw, and most importantly....delicious!



Ingredients:
3/4 cup, organic pumpkin seeds (soaked for 4-8 hours)*
1 cup, organic almonds, roughly chopped (soaked for 4-8 hours)*
1/3 cup organic flax seed, freshly ground
1 cup, organic shredded coconut
2 cups organic, rolled oats
1 tbsp organic vanilla extract
1 Scoop hemp seed protein
1 TBSP Sweetener, optional (agave, honey, brown sugar...whatever! :) )
1 cup dried berries
1 cup raisins

* Nuts and seeds do not need to be soaked but it does aid with the digestion of them if you do, especially if using raw nuts and seeds. If you do soak, I do recommend either dehydrating them or roasting in the oven with the coconut to add a little extra crunchiness and flavor to your granola.

**To make this granola raw, just select all raw ingredients and dehydrate until granola is golden brown.**

1. Preheat oven to 250. Mix all ingredients in a large bowl except for dried fruit. Press flat onto two cookie sheets.
2. Bake in over for 50-60 mins or until granola is golden brown.
3. Toss granola with dried fruit.


Enjoy a bowl with some almond or coconut milk!
Store granola in a airtight container.

Energy/Protein Bars

As a girl on the go, I eat my fair share of bars. It is a rare day that you would find me without some sort of bar in my bag or car. And the day that you do run into me hungry and without a bar,,,watch out!
I try to choose bars that are as natural and minimally processed as possible. Best case scenario, I make my own!

Ingredients:*
1/2 cup coconut oil
1/3 cup nut butter (I used peanut butter in these, but almond is my fav)
1 scoop protein powder
1/4 cup chopped walnuts
1/4 cup sunflower seeds
1/4 cup raisins
1/4 cup shredded coconut
1/4 cup chocolate chips
2 TBSP Agave or Honey (optional- to sweeten)

** If choosing to make these bars Raw or Living. Just choose all raw ingredients.**
*You want your ratio of coconut oil to nut butter to stay similar to this, but everything else is completely up to your preference! Ive added all sorts of things such as banana, dried cherries and other fruit, cacao powder, various seeds and nuts. You can also play with the amounts of these to get the texture of you bar as "gritty" as you desire.

1) Melt coconut oil in a saucepan over low heat. Stir in nut butter. Once well blended remove from heat.
(If you are following a strict raw diet, melt your oil by placing it in a bowl of warm water)

2) Stir in all other ingredients, starting with ingredients that really need to mix in well (protein powder) and ending with ingredients that may melt if added when mixture is warm (chocolate chips).

3) Pour mixture into a tin foil lined baking tray of sorts. Its OK if mixture is not very deep.

4) Place in freezer for about 30 mins

5) Cut into bars!

You should store these in the fridge as coconut oil will melt above about 75. Keep in mind these are not a low calorie food! But they are a great, nutritious, and tasty way to get energy in a hurry! Would make a great, easy to eat,  breakfast bar for you breakfast skippers!

Green Smoothie!

If you have not heard about the amazing and wonderful powers of green smoothies that are all the rage lately, climb out from under your rock and blend one of these up pronto!

Green smoothies are being raved about because they pack all the nutritional goodness of multiple raw fruits and vegetables and taste GREAT! Honestly, besides the colour, you will not even know that you are taking in vegetables. A general rule of thumb in creating these recipes is 50% fruits and 50% vegetables with some water, milk (dairy, coconut, nut, soy) or juice to help the mixing along. You can also add any other supplements you want...protein powder, vit D drops, Aloe Vera juice, etc... A quick internet search will give you lots of ideas for what to blend together I like the ideas on The Best of Raw Food and Green Diva Mom

Here is a little combo that I really enjoy as a gloomy day pick me up! 



Ingredients:

Banana (Frozen will make your smoothie even creamier!)
1 Pear
1 cup Pineapple
1 bunch Kale
1 bunch Spinach
1 Scoop Raw Sprouted grain protein
Fill about 1/4-1/2 up ingredients with water (you can always add more)

Blend it Baby!!



Ohhh la la! A nutrient packed, illness fighting, mood enlightening greeeeeeeeeeeeen smoothie!

Avocado Pesto Pasta

Found this yummy recipe at Veg News. Click on the link for the original or check out the sammified version below...

 Ingredients:
1 pound whole wheat linguine
1 bunch basil leaves
½ cup Macadamia nuts (unless you have pine, but macs were on sale :) )
2 ripe avocados, pitted and peeled
2 tablespoons fresh lemon juice (about ½ of a lemon)
1 lg clove garlic
½ cup olive oil
¼ cup chopped sun dried tomatoes (optional)
Pinch of sea salt

1) Cook pasta according to directions.
2) Throw all the other ingredients (except sun dried toms) into a blender or food processor. Blend until smooth and creamy.
3. Toss into pasta. Garnish with sun dried toms and fresh basil.


Thor loved this and I just didn't mention that the sauce was raw and vegan. :) I cant wait to make this for a cold summer pasta salad, I may even throw a few sliced avos into the bowl as an extra garnish. People will think you are a gourmet healthy chef and I wont let them know it took ten minutes!

Full Circle and "The Big Salad"


The other day I had my first fruit and vegetable pick up from Full Circle Farm. You may of heard of the new movements to get fresh fruits and veggies from the farm to you table as quickly as possible. All of the produce is organic and they try to source it as locally as possible.
I know of two organizations in the Spokane area that do this. Other than Full Circle, there is also Bountiful Baskets. I believe Baskets is more of a government program that stations out-posts to local communities and Full Circle is based out of WA state and is mainly on the west coast. Full Circle offers only organic produce and you select between a standard box ($32) or a family box ($41). You pick it up at a designated location of your choice between about noon and 7pm on a Thursday.
Bountiful Baskets offers a "regular" basket ($15) or an organic basket ($25). You pick a location to pick it up on Saturday mornings, but you only have about a 15 minute window to collect your produce.
Both organizations are very flexible with your orders and you can select weekly or bi-weekly schedules. You can of course opt out whenever you wish.
I managed to find a $15 off code for Full circle Farms so decided to try it out and share that experience with you! (the code was Q13FOX in case you want to give it a shot).
Placing my order was easy peasy and I was able to select food that I wanted to permanently exclude from by boxes. Also, the weekend before pick-up day, I was able to log-in and see what I was going to be receiving and make some substitutions....pretty handy in menu planning!


Here is the cute box that I picked up from a local Spa in town. Cant wait to open it and see what my $18 bought me!!! By the way the smell is soooo good and fresh! 


Oh My!! Organic broccoli, green lettuce, kale, mushrooms, turnips, pears, oranges, tomatillos, cilantro, spinach, a cucumber and a mango! 


 I love seeing fresh soil on the ends of my spinach!!!

Due to lack of creativity and a great hunger I decided you use my new box of veggies to make a Big Salad (Seinfeld anyone?). I used many things from the box and also some things I had in the fridge already...

Green Lettuce
Spinach
Mushrooms
Cucumber
Broccoli
Avocado
Clover Sprouts
Sunflower seeds (I actually intended to add these and forgot!)
Dressing of Choice (this salad tasted so vibrant and fresh it really needed very little dressing!)


I'm also thinking I want to use those tomatillos and Cilantro for a green salsa...Ill post this weekend :)
